Santa Fe’s Historic Eatery The Pink Adobe Turns 80

Santa Fe’s historic restaurant, The Pink Adobe, is hosting a special 80th anniversary dinner. To commemorate its inception by Santa Fe local legend Rosalea Murphy, The Pink Adobe and its sister bar, The Dragon Room, are hosting a celebratory set menu option through July.

The Dinner

At The Pink Adobe, an $80 dinner featuring curated starters, a choice of Fire Roasted Chile Relleno or Steak Dunigan for entree, plus dessert. This special menu includes a selection of wine, specialty beer, or the house Silver Coin Margarita. At the Dragon Room, there is a $19.44 social hour trio — a nod to the year the destination’s doors opened in 1944 — which includes a choice of wine, beer, or the special Rosalita margarita, named in honor of The Pink Adobe’s founder, Rosalea Murphy. The restaurant and bar are open Tuesday through Sunday from 5pm to 9pm.

The Pink Adobe and Dragon Room

Standing at the heart of Santa Fe’s historic Barrio De Analco neighborhood, the ‘oldest block in the US,’ is the landmark Pink Adobe restaurant and Dragon Room Bar. The sister venues were founded in 1944 by Rosalea Murphy, a Santa Fe local who embodied the city’s spirit in her independent nature and vibrant personality. As an early advocate for women’s rights, a painter, an art dealer, and a chef, Rosalea had a rolodex of Santa Fe somebody’s that she frequently hosted for dinner parties featuring her home-cooked Creole meets Southwest dishes. These dishes became the basis for the restaurant and bar that was once a favorite haunt for local and internationally renowned artists like Robert Redford, Mark Rothko, Georgia O’Keeffe, and John Sloan. The Pink Adobe’s 80th Anniversary is the first milestone for the new owners of the beloved restaurant.
